Pancakes with a better conscience...

I grew up in a really dutch family, defnitely food wise...
My whole family loves sugar, and butter, and more sugar, and we would eat dutch pancakes at least once a week. These heavy, greasy and sugary flaps of dough are of course supertasty, but not really ideal if you don´t want to clog your arteries and gain at least 2 kilograms of weight.
Since I live by myself I don´t eat pancakes that often anymore, but once in a while this cravings for the heavily sugared flaps come up again. Just to not lay in my bed with a really bad conscience, I now try to use healthier substitues when I make them!

What I use:
-Whole wheat flour instead of 'white' flour, it fills your stomach more and you don't get such a sugar high out of it
-Biological eggs  (3 stars from the 'Beter Leven' certification)
-Soy milk. I'm slightly lactose intolerant and with soy milk I still get the same amount of proteins of cow milk
-Coconut palm sugar, normally I would put white granulated sugar or syrup on my pancakes,but the coconut sugar again doesn't give me such a sugar high.

 It's the apple season here in Holland, and at the moment I put apple in EVERYTHING, and thinly sliced apple on a pancake with some cinnamon is just delicious!

And I must admit, somehow the first pancak that I bake ALWAYS goes wrong... And somehow these also taste the best...


For some more nutrients I added some quark (greek yoghurt is also good!), some banana andsome more cinnamon!
